Porchetta Rice Bowl
Ingredients:
- 1 cup uncooked white rice
- 2 cups water
- 2 tablespoons olive oil
- 1/2 cup diced ham
- 1/2 cup diced porchetta
- 1/2 cup diced tomato
- 1/2 cup diced onion
- Salt and pepper to taste
Instructions:
1. In a medium saucepan, bring the water to a boil. Add the rice and stir. Reduce heat to low and simmer, covered, for 15 minutes.
2. Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the ham, porchetta, tomato, and onion and cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
3. When the rice is done, add it to the skillet with the vegetables and stir to combine. Season with salt and pepper to taste.
4. Serve the porchetta rice bowl hot. Enjoy!
