Chicken and Tomato Stew
Ingredients:
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 cups diced tomatoes
- 2 cups chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion and garlic and cook until softened, about 5 minutes.
3. Add the chicken and cook until lightly browned, about 8 minutes.
4. Add the tomatoes, chicken broth, oregano, and basil. Bring to a boil, then reduce the heat and simmer for 20 minutes.
5. Season with salt and pepper, to taste.
6. Serve hot. Enjoy!
