Garlic Chicken and Rice

Ingredients:

- 2 cups of uncooked white rice

- 2 tablespoons of olive oil

- 2 cloves of garlic, minced

- 1 onion, diced

- 2 boneless, skinless chicken breasts, cut into cubes

- 2 cups of chicken broth

- Salt and pepper, to taste

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the garlic and onion and cook until the onion is softened and the garlic is fragrant, about 3 minutes.

3. Add the chicken cubes and cook until the chicken is cooked through, about 5 minutes.

4. Add the rice and stir to combine.

5. Pour in the chicken broth and bring to a boil.

6. Reduce the heat to low, cover, and simmer for 15 minutes, or until the rice is cooked through.

7. Season with salt and pepper, to taste.

8. Serve hot. Enjoy!
