Garlic Chicken and Rice
Ingredients:
- 2 chicken breasts, cut into cubes
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 onion, diced
- 2 cups cooked white rice
- 2 eggs, lightly beaten
- Salt and pepper
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the chicken cubes and cook until lightly browned, about 5 minutes.
3. Add the garlic and onion and cook for an additional 2 minutes.
4. Add the cooked rice and stir to combine.
5. Pour the eggs over the top and stir to combine.
6. Cook until the eggs are cooked through, about 5 minutes.
7. Season with salt and pepper to taste.
8. Serve hot. Enjoy!
