Garlic Chicken and Rice
Ingredients:
-1 lb. chicken breasts, cut into cubes
-1 cup uncooked white rice
-2 cloves garlic, minced
-1 large tomato, diced
-1 small onion, diced
-2 tablespoons olive oil
-Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the chicken cubes and season with salt and pepper. Cook for 5 minutes, stirring occasionally.
3. Add the garlic, tomato, and onion to the skillet and cook for an additional 5 minutes, stirring occasionally.
4. Add the uncooked rice to the skillet and stir to combine.
5. Reduce the heat to low and cover the skillet. Simmer for 15 minutes, or until the rice is cooked through.
6. Serve the garlic chicken and rice hot. Enjoy!
