Egg and Cheese Breakfast Skillet

Ingredients:

- 2 tablespoons olive oil
- 1 small onion, diced
- 1 large tomato, diced
- 4 eggs
- 1/2 cup shredded cheese
- Salt and pepper, to taste

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the onion and tomato and cook until softened, about 5 minutes.

3. Crack the eggs into the skillet and season with salt and pepper.

4. Cook until the eggs are cooked through, about 5 minutes.

5. Sprinkle the cheese over the top and cook until melted, about 2 minutes.

6. Serve warm. Enjoy!
