Cheesy Tomato and Onion Omelet

Ingredients:

- 2 eggs
- 1/4 cup shredded cheese
- 1/4 cup diced tomato
- 1/4 cup diced onion
- Salt and pepper to taste

Instructions:

1. In a medium bowl, whisk together the eggs until they are light and fluffy.

2. Heat a non-stick skillet over medium heat and add the eggs.

3. As the eggs begin to set, sprinkle the cheese, tomato, and onion over the top.

4. Season with salt and pepper.

5. Using a spatula, fold the omelet in half and cook for an additional 2-3 minutes, or until the cheese is melted and the omelet is cooked through.

6. Serve immediately. Enjoy!
