Chicken and Rice
Ingredients:
- 2 cups of uncooked rice
- 2 boneless, skinless chicken breasts, cut into cubes
- 1 onion, diced
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 2 cups of chicken broth
- 1 teaspoon of dried oregano
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the diced onion and garlic and cook until the onion is softened, about 5 minutes.
3. Add the chicken cubes and cook until they are no longer pink, about 8 minutes.
4. Add the uncooked rice, chicken broth, oregano, salt, and pepper. Stir to combine.
5. Bring the mixture to a boil, then reduce the heat to low and cover the skillet.
6. Simmer for 20 minutes, or until the rice is cooked through and all of the liquid has been absorbed.
7. Serve the chicken and rice hot. Enjoy!
