One-Pot Chicken and Rice
Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup uncooked long grain white rice
- 1 (14.5 ounce) can diced tomatoes
- 2 cups chicken broth
- 1/2 cup uncooked pasta (such as penne or rotini)
- 1/2 cup shredded cheese (such as cheddar or mozzarella)
Instructions:
1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
2. Add the chicken, Italian seasoning, salt, and pepper. Cook until the chicken is cooked through, about 8 minutes.
3. Add the rice, tomatoes, and chicken broth. Bring to a boil, then reduce the heat to low. Cover and simmer for 15 minutes.
4. Add the pasta and stir to combine. Cover and simmer for an additional 10 minutes, or until the pasta is cooked through.
5. Remove from the heat and stir in the cheese. Serve warm.
