Vegetable Curry
Ingredients:
- 2 tablespoons of vegetable oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1 teaspoon of garam masala
- 1 large capsicum, diced
- 2 large tomatoes, diced
- 2 potatoes, diced
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/2 cup of water
Instructions:
1. Heat the oil in a large saucepan over medium heat.
2. Add the onion and garlic and cook until the onion is soft and translucent, about 5 minutes.
3. Add the cumin, coriander, and garam masala and cook for 1 minute.
4. Add the capsicum, tomatoes, potatoes, salt, and pepper and cook for 5 minutes, stirring occasionally.
5. Add the water and bring to a boil.
6. Reduce the heat to low and simmer for 15 minutes, stirring occasionally.
7. Serve over cooked rice or with naan bread. Enjoy!
