Chicken and Cheese Quesadillas
Ingredients:
-2 boneless, skinless chicken breasts
-1/2 cup shredded cheese
-1/2 teaspoon salt
-1 tomato, diced
-1 onion, diced
-4 flour tortillas
Instructions:
1. Preheat a large skillet over medium-high heat.
2. Cut the chicken into small cubes and season with salt.
3. Add the chicken to the skillet and cook until golden brown, about 5 minutes.
4. Remove the chicken from the skillet and set aside.
5. In the same skillet, add the diced tomato and onion and cook until softened, about 5 minutes.
6. Add the cooked chicken back to the skillet and stir to combine.
7. Place one tortilla on a flat surface and sprinkle with 1/4 cup of cheese.
8. Top with the chicken and vegetable mixture and sprinkle with another 1/4 cup of cheese.
9. Place a second tortilla on top and press down lightly.
10. Heat a large skillet over medium heat.
11. Place the quesadilla in the skillet and cook for 3-4 minutes per side, or until golden brown and the cheese is melted.
12. Remove from the skillet and cut into wedges.
13. Serve warm. Enjoy!
