Chicken and Rice Casserole
Ingredients:
- 2 cups cooked white rice
- 2 cups cooked, diced chicken
- 1/2 cup diced onion
- 1/2 cup diced tomato
- 1 cup shredded cheese
- 2 eggs, lightly beaten
- Salt and pepper to taste
Instructions:
1. Preheat oven to 350°F.
2. Grease a 9x13-inch baking dish.
3. In a large bowl, combine cooked rice, chicken, onion, tomato, and cheese.
4. Pour mixture into prepared baking dish.
5. In a small bowl, whisk together eggs, salt, and pepper.
6. Pour egg mixture over the rice and chicken mixture.
7. Bake for 30 minutes, or until the top is golden brown and the egg is cooked through.
8. Serve warm. Enjoy!
