Cheesy Chicken and Rice
Ingredients:
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 pound boneless, skinless chicken breasts, cut into cubes
- 2 cups uncooked white rice
- 2 cups chicken broth
- 1 can diced tomatoes
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 cups shredded cheese
- 2 eggs, lightly beaten
Instructions:
1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
2. Add the chicken and cook until the chicken is cooked through, about 8 minutes.
3. Add the rice and stir to combine.
4. Add the chicken broth, diced tomatoes, salt, and pepper. Bring to a boil, then reduce the heat to low and cover. Simmer for 20 minutes.
5. Remove the lid and stir in the cheese and eggs. Cook for an additional 5 minutes, stirring occasionally.
6. Serve hot. Enjoy!
