Roasted Potato and Onion
Ingredients:
- 2 potatoes, peeled and diced
- 1 onion, peeled and diced
- 2 tablespoons olive oil
- 1 teaspoon salt
Instructions:
1. Preheat oven to 400 degrees F.
2. Place potatoes and onion in a bowl and toss with olive oil and salt.
3. Spread the mixture onto a baking sheet and bake for 25 minutes, or until potatoes are golden brown and tender.
