Tomato Rice Casserole

Ingredients:

- 2 cups cooked white rice
- 2 cups diced tomatoes
- 1 cup shredded cheese
- 1/2 cup diced onion
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions:

1. Preheat oven to 350 degrees F.

2. Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and cook until softened, about 5 minutes.

3. Add the diced tomatoes and cook for an additional 5 minutes.

4. In a large bowl, combine the cooked rice, cooked onion and tomato mixture, and shredded cheese. Season with salt and pepper to taste.

5. Transfer the mixture to a 9x13 inch baking dish.

6. Bake in preheated oven for 25 minutes, or until cheese is melted and bubbly.

7. Serve hot. Enjoy!
