Tomato Rice Bake
Ingredients:
- 2 cups cooked rice
- 2 cups diced tomatoes
- 1 cup shredded cheese
- 1/2 cup diced onion
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. Preheat oven to 350 degrees F.
2. Heat olive oil in a large skillet over medium-high heat. Add onion and cook until softened, about 5 minutes.
3. Add tomatoes and cook for an additional 5 minutes.
4. In a large bowl, combine cooked rice, cooked onion and tomatoes, and shredded cheese. Stir to combine.
5. Pour mixture into a greased 9x13 inch baking dish.
6. Bake for 25-30 minutes, or until cheese is melted and bubbly.
7. Serve warm. Enjoy!
