Tomato Rice Casserole

Ingredients:

- 2 cups cooked white rice
- 2 cups diced tomatoes
- 1 cup shredded cheese
- 1/2 cup diced onion
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste

Instructions:

1. Preheat oven to 350°F.

2. Heat olive oil in a large skillet over medium-high heat.

3. Add onion and cook until softened, about 5 minutes.

4. Add garlic powder, salt, and pepper and cook for 1 minute.

5. Add tomatoes and cook for 5 minutes.

6. In a large bowl, combine cooked rice, tomato mixture, and cheese.

7. Transfer to a greased 9x13 inch baking dish.

8. Bake for 25 minutes, or until cheese is melted and bubbling.

9. Let cool for 5 minutes before serving. Enjoy!
