Garlic Chicken with Tomato and Onion

Ingredients:

- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 large onion, diced
- 2 large tomatoes, diced
- 1 pound boneless, skinless chicken breasts, cut into cubes
- Salt and pepper, to taste
- 1/4 cup chopped fresh parsley

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the garlic, onion, and tomatoes and sauté for 3-4 minutes, until the vegetables are softened.

3. Add the chicken cubes and season with salt and pepper. Cook for 8-10 minutes, stirring occasionally, until the chicken is cooked through.

4. Remove from heat and stir in the parsley. Serve warm.
