Tomato Fried Rice
Ingredients:
- 2 tablespoons vegetable oil
- 1/2 onion, diced
- 1/2 red pepper, diced
- 2 cloves garlic, minced
- 2 cups cooked white rice
- 1 large tomato, diced
- 2 eggs, lightly beaten
- Salt and pepper to taste
Instructions:
1. Heat oil in a large skillet over medium heat.
2. Add onion and pepper and cook until softened, about 5 minutes.
3. Add garlic and cook for an additional minute.
4. Add cooked rice and tomato and stir to combine.
5. Push the rice mixture to the sides of the pan and pour in the eggs. Allow the eggs to cook for a few minutes before stirring them into the rice.
6. Season with salt and pepper to taste.
7. Serve warm. Enjoy!
