Chicken and Rice
Ingredients:
- 2 boneless, skinless chicken breasts
- 2 cups of uncooked white rice
- 1 large onion, diced
- 2 tablespoons of olive oil
- 2 cups of chicken broth
- Salt and pepper to taste
Instructions:
1. Preheat oven to 350 degrees F.
2. Heat olive oil in a large skillet over medium-high heat.
3. Add diced onion and sauté until softened, about 5 minutes.
4. Add chicken breasts and cook until golden brown on both sides, about 5 minutes per side.
5. Remove chicken from skillet and set aside.
6. Add uncooked rice to the skillet and stir to coat with the onion and oil.
7. Add chicken broth and bring to a boil.
8. Reduce heat to low and simmer for 10 minutes.
9. Place chicken breasts on top of the rice and season with salt and pepper.
10. Cover skillet with a lid and bake in preheated oven for 20 minutes.
11. Remove from oven and let stand for 5 minutes before serving. Enjoy!
