Chicken and Rice

Ingredients:

- 2 boneless, skinless chicken breasts
- 2 cups of long grain white rice
- 1 large onion, diced
- 2 cups of chicken broth
- 2 tablespoons of olive oil
- Salt and pepper to taste

Instructions:

1. Preheat oven to 350°F.

2. Heat the olive oil in a large skillet over medium-high heat.

3. Add the diced onion and sauté until softened, about 5 minutes.

4. Add the chicken breasts to the skillet and season with salt and pepper. Cook until the chicken is golden brown and cooked through, about 8 minutes.

5. Remove the chicken from the skillet and set aside.

6. Add the rice to the skillet and stir to combine with the onion.

7. Pour in the chicken broth and bring to a boil.

8. Reduce the heat to low, cover the skillet, and simmer for 20 minutes.

9. Place the chicken breasts on top of the rice and cover the skillet.

10. Bake in the preheated oven for 20 minutes.

11. Remove from the oven and let stand for 5 minutes before serving. Enjoy!
