Tomato Chicken and Rice
Ingredients:
-1 cup of uncooked long grain white rice
-2 tablespoons of olive oil
-1 large onion, diced
-2 cloves of garlic, minced
-1 pound of boneless, skinless chicken breasts, cut into cubes
-1 large tomato, diced
-1 teaspoon of oregano
-1 teaspoon of paprika
-Salt and pepper to taste
-1 cup of chicken broth
-1/2 cup of grated Parmesan cheese
Instructions:
1. Preheat oven to 350 degrees F.
2. In a large skillet, heat olive oil over medium heat. Add the onion and garlic and cook for 3-4 minutes, stirring occasionally.
3. Add the chicken cubes and cook for 5-6 minutes, stirring occasionally.
4. Add the tomato, oregano, paprika, salt, and pepper. Cook for another 3-4 minutes.
5. Add the chicken broth and bring to a boil.
6. Add the rice and stir to combine.
7. Cover the skillet and transfer to the preheated oven. Bake for 25 minutes.
8. Remove from oven and stir in the Parmesan cheese.
9. Serve hot. Enjoy!
