Tomato and Onion Chicken and Rice
Ingredients:
- 2 chicken breasts, cut into cubes
- 2 cups uncooked white rice
- 1 large tomato, diced
- 1 large onion, diced
- 2 tablespoons olive oil
- 2 teaspoons salt
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the chicken cubes and cook until golden brown, about 5 minutes.
3. Add the diced onion and tomato and cook for an additional 3 minutes.
4. Add the uncooked rice and salt and stir to combine.
5. Reduce heat to low and cover the skillet.
6. Simmer for 15 minutes, stirring occasionally.
7. Remove from heat and serve. Enjoy!
