Chicken and Rice

Ingredients:

- 2 cups of uncooked white rice
- 2 cups of chicken broth
- 1 pound of chicken breasts, cut into cubes
- 1 onion, diced
- 2 tablespoons of olive oil
- Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the chicken cubes and onion to the skillet and cook until the chicken is cooked through and the onion is softened, about 5 minutes.

3. Add the uncooked rice and chicken broth to the skillet and stir to combine.

4. Bring the mixture to a boil, reduce the heat to low, cover the skillet, and simmer for 15 minutes or until the rice is cooked through.

5. Season with salt and pepper to taste and serve.
