Vegetable Fried Rice
Ingredients:
- 2 cups cooked white rice
- 1 small onion, diced
- 2 carrots, diced
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the onion and carrots and cook until softened, about 5 minutes.
3. Add the cooked rice and stir to combine.
4. Season with salt and pepper, to taste.
5. Cook for an additional 5 minutes, stirring occasionally, until the vegetables are cooked through and the rice is hot.
6. Serve hot. Enjoy!
