Grão Bico and Onion Stew
Ingredients:
- 1 cup of grão bico
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 2 cups of vegetable broth
- Salt and pepper to taste
Instructions:
1. In a large pot, heat the olive oil over medium heat.
2. Add the diced onion and garlic and cook until the onion is softened, about 5 minutes.
3. Add the grão bico and stir to combine.
4. Pour in the vegetable broth and bring to a boil.
5. Reduce the heat to low and simmer for 25-30 minutes, or until the grão bico is cooked through.
6. Season with salt and pepper to taste.
7. Serve warm. Enjoy!
