Bean and Onion Stew
Ingredients:
- 2 cans of beans (black, kidney, or pinto), drained and rinsed
- 1 large onion, diced
- 2 cloves of garlic, minced
- 2 tablespoons olive oil
- 2 cups vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- Salt and pepper, to taste
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
3. Add the beans, vegetable broth, oregano, and cumin. Bring to a boil.
4. Reduce the heat to low and simmer for 15 minutes, stirring occasionally.
5. Season with salt and pepper, to taste.
6. Serve hot. Enjoy!
