Hash Brown Egg Bake
Ingredients:
-3 large potatoes, peeled and shredded
-1 large onion, diced
-3 tablespoons butter
-6 eggs
-Salt and pepper to taste
Instructions:
1. Preheat oven to 350 degrees Fahrenheit.
2. In a large bowl, combine the shredded potatoes, diced onion, and butter. Mix until the butter is evenly distributed.
3. Grease a 9x13 inch baking dish with butter or cooking spray.
4. Spread the potato mixture into the baking dish and press down to form an even layer.
5. Crack the eggs into a separate bowl and whisk until combined.
6. Pour the egg mixture over the potatoes and onions, making sure to spread it evenly.
7. Sprinkle with salt and pepper, to taste.
8. Bake for 25-30 minutes, or until the eggs are set and the potatoes are golden brown.
9. Let cool for 5 minutes before serving. Enjoy!
