Oreo Cheesecake Bars
Ingredients:
- 24 Oreo cookies
- 2 tablespoons unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
Instructions:
1. Preheat the oven to 325°F (160°C) and line an 8x8 inch baking pan with parchment paper.
2. In a food processor, crush 16 Oreo cookies into fine crumbs. Mix the crumbs with melted butter and press into the bottom of the prepared pan to form the crust.
3. In a mixing bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
4. Crush the remaining 8 Oreo cookies and gently fold them into the cream cheese mixture.
5. Pour the cheesecake batter over the Oreo crust and spread it evenly.
6. Bake in the preheated oven for 35-40 minutes, or until the edges are set and the center is slightly jiggly.
7. Allow the cheesecake bars to cool completely at room temperature, then refrigerate for at least 2 hours before slicing into bars.
8. Serve chilled and enjoy!
