Vegetable and Bean Scramble

Ingredients:
- 1 egg
- 1/2 cup of diced vegetables (such as peppers, onions, mushrooms, etc.)
- 1/4 cup cooked beans (such as black beans, pinto beans, etc.)
- 1/4 cup diced tomatoes

Instructions:
1. Heat a skillet over medium heat and add a tablespoon of oil.

2. Add the diced vegetables and cook for 3-4 minutes, stirring occasionally.

3. Add the cooked beans and diced tomatoes and cook for an additional 2 minutes.

4. Crack the egg into the skillet and scramble everything together.

5. Cook for an additional 2 minutes or until the egg is cooked through.

6. Serve and enjoy!
