Pan-Fried Cod with Brown Rice and Leeks
Ingredients:
- 2 cups of cooked brown rice
- 2 cod fillets
- 1 leek, thinly sliced
- 1 onion, diced
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the onion and leek and cook until softened, about 5 minutes.
3. Add the cod fillets and cook for 3-4 minutes per side, until golden brown and cooked through.
4. Remove the cod from the skillet and set aside.
5. Add the cooked brown rice to the skillet and cook for 3-4 minutes, stirring occasionally.
6. Add the cod back to the skillet and season with salt and pepper.
7. Cook for an additional 2-3 minutes, stirring occasionally, until the cod is heated through.
8. Serve the cod and rice with a side of your favorite vegetables. Enjoy!
