Pan-Fried Fish with Roasted Potatoes and Avocado
Ingredients:
- 4 (6-ounce) fish fillets
- 2 large potatoes, cut into 1-inch cubes
- 1 large onion, diced
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 avocado, diced
Instructions:
1. Preheat oven to 375 degrees F.
2. Place potatoes and onion in a large bowl. Drizzle with olive oil and season with salt and pepper. Toss to coat.
3. Spread potatoes and onion onto a baking sheet and bake for 25 minutes, or until potatoes are tender and golden.
4. Heat a large skillet over medium-high heat. Add fish fillets and cook for 4-5 minutes per side, or until cooked through.
5. To serve, divide potatoes and onion among four plates. Top with fish fillets and diced avocado. Enjoy!
