Make Pan-Seared Red Fish with Potato and Onion Hash

Recipe Name: Pan-Seared Red Fish with Potato and Onion Hash

Ingredients:
- 2 red fish fillets
- 2 potatoes, peeled and diced
- 1 onion, diced
- Salt and pepper to taste
- Olive oil
- Fresh herbs for garnish (optional)

Instructions:
1. Season the red fish fillets with salt and pepper on both sides.
2. Heat a pan over medium-high heat and add a drizzle of olive oil.
3. Place the red fish fillets in the pan and sear for about 3-4 minutes on each side until cooked through. Remove from the pan and set aside.
4. In the same pan, add a bit more olive oil if needed and add the diced potatoes. Cook for about 5 minutes until they start to brown.
5. Add the diced onions to the pan with the potatoes and continue cooking until the onions are translucent and the potatoes are cooked through.
6. Season the potato and onion hash with salt and pepper to taste.
7. Serve the pan-seared red fish fillets on top of the potato and onion hash.
8. Garnish with fresh herbs if desired.
