Make Pan-Seared Salmon with Pea and Potato Mash
Recipe Name: Pan-Seared Salmon with Pea and Potato Mash
Ingredients:
- 2 salmon fillets
- 1 cup frozen peas
- 2 large potatoes, peeled and diced
- 2 tablespoons butter
- 1/4 cup milk
- Salt and pepper to taste
- Olive oil
- Lemon wedges for serving
Instructions:
1. Start by boiling the diced potatoes in a pot of salted water until they are fork-tender, about 15-20 minutes. Drain the potatoes and return them to the pot.
2. In a separate pot, cook the frozen peas according to package instructions. Once cooked, drain the peas and set aside.
3. Mash the boiled potatoes in the pot using a potato masher or fork. Add butter, milk, salt, and pepper to the mashed potatoes and mix well until smooth and creamy. Stir in the cooked peas and keep warm.
4. Season the salmon fillets with salt and pepper on both sides.
5. Heat a drizzle of olive oil in a skillet over medium-high heat. Once the skillet is hot, add the salmon fillets skin-side down. Cook for about 4-5 minutes until the skin is crispy.
6. Carefully flip the salmon fillets and cook for an additional 3-4 minutes until the salmon is cooked through and flakes easily with a fork.
7. Serve the pan-seared salmon on top of the pea and potato mash. Garnish with lemon wedges and enjoy!
8. Optional: You can also drizzle some extra olive oil or a squeeze of lemon juice over the salmon before serving for added flavor.
