Make Papa Rellena con Cuero de Chancho
Recipe: Papa Rellena con Cuero de Chancho
Ingredients:
- 4 potatoes
- 1 cup cuero de chancho (pork cracklings)
- 1 onion, finely chopped
- 1/2 cup peanuts, chopped
- 2 tablespoons vegetable shortening
- 1/4 cup parsley, chopped
- 1 egg
- Salt to taste
Instructions:
1. Boil the potatoes until they are soft. Peel and mash them in a bowl.
2. In a pan, heat the vegetable shortening and sauté the chopped onion until translucent.
3. Add the cuero de chancho and chopped peanuts to the pan, and cook for a few minutes.
4. Mix the sautéed ingredients with the mashed potatoes in the bowl. Add chopped parsley and salt to taste. Mix well.
5. Take a portion of the potato mixture and flatten it in your hand. Place a boiled egg in the center and shape the potato mixture around it to form a ball.
6. Repeat the process with the remaining mixture.
7. Heat oil in a pan for frying. Once hot, carefully place the potato balls in the oil and fry until golden brown.
8. Remove from the oil and place on a paper towel to drain excess oil.
9. Serve the Papa Rellena con Cuero de Chancho hot and enjoy!
