Parmigiano Reggiano Mushroom Pasta

Ingredients:

-1/2 cup Parmigiano Reggiano, grated
-1/2 cup mushrooms, sliced
-1 kiwi, peeled and diced
-1/2 teaspoon salt
-1/4 teaspoon pepper
-2 eggs, beaten
-1/2 cup nuts, chopped
-1/4 cup parsley, chopped
-1 pound pasta, cooked according to package instructions

Instructions:

1. Preheat oven to 350°F.

2. In a large bowl, combine Parmigiano Reggiano, mushrooms, kiwi, salt, pepper, eggs, nuts, and parsley. Mix until ingredients are evenly distributed.

3. Spread the mixture onto a greased baking sheet.

4. Bake for 15-20 minutes, or until the top is golden brown.

5. Meanwhile, cook the pasta according to package instructions.

6. Once the Parmigiano Reggiano mixture is done baking, remove from oven and let cool.

7. Once cooled, break into small pieces and mix with the cooked pasta.

8. Serve warm and enjoy!
