Garlic and Herb Potato Salad
Ingredients:
-3 cups of diced red potatoes
-1/2 cup mayonnaise
-1/2 teaspoon freshly ground black pepper
-2 hard-boiled eggs, diced
-1/4 cup diced onion
-2 cloves garlic, minced
-2 tablespoons chopped fresh parsley
Instructions:
1. Place the diced potatoes in a large pot and cover with cold water. Bring to a boil over medium-high heat and cook for 10-12 minutes, or until potatoes are tender. Drain and set aside.
2. In a large bowl, combine the mayonnaise, pepper, eggs, onion, garlic, and parsley.
3. Add the cooked potatoes to the bowl and gently stir to combine.
4. Cover and refrigerate for at least 1 hour before serving. Enjoy!
