Make Parsley and Bean Saute



Parsley and Bean Saute

Ingredients:

- 2 tablespoons olive oil
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1 zucchini, diced
- 1 can (15 ounces) black beans, rinsed and drained
- 1/4 cup chopped fresh parsley
- Salt and pepper, to taste

Instructions:

1. Heat the olive oil in a large skillet over medium heat.

2. Add the onion and garlic and cook until the onion is softened, about 4 minutes.

3. Add the zucchini and cook for an additional 2 minutes.

4. Add the beans and cook for another 2 minutes.

5. Add the parsley and season with salt and pepper, to taste.

6. Cook for an additional 2 minutes, stirring occasionally.

7. Serve warm. Enjoy!
