Parsley, Bean, and Zucchini Saute

Ingredients:

- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 zucchinis, diced
- 1 can (15 ounces) black beans, drained and rinsed
- 2 tablespoons chopped fresh parsley
- Salt and pepper, to taste

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the onion and garlic and cook until the onion is softened, about 5 minutes.

3. Add the zucchini and cook until it is tender, about 5 minutes.

4. Add the beans and cook until heated through, about 3 minutes.

5. Add the parsley and season with salt and pepper.

6. Serve warm. Enjoy!
