Passion Fruit and Mandarin Glazed Eggplant with Foie Gras

Ingredients:

-1 large eggplant, cut into 1/2-inch thick slices

-1/4 cup passion fruit puree

-1/4 cup mandarin juice

-1 tablespoon honey

-1 tablespoon olive oil

-Salt and pepper, to taste

-4 ounces foie gras, cut into small cubes

Instructions:

1. Preheat oven to 375 degrees F.

2. Place the eggplant slices on a baking sheet lined with parchment paper.

3. In a small bowl, whisk together the passion fruit puree, mandarin juice, honey, and olive oil.

4. Brush the mixture over the eggplant slices, and season with salt and pepper.

5. Bake for 20 minutes, or until the eggplant is tender.

6. Remove from the oven, and top each eggplant slice with a cube of foie gras.

7. Return to the oven and bake for an additional 5 minutes, or until the foie gras is lightly browned.

8. Serve warm. Enjoy!
