Make Pasta Carbonara with Mangold
Pasta Carbonara with Mangold
Ingredients:
- 8 ounces of pasta of your choice
- 4 slices of bacon, diced
- 4 slices of salami, diced
- 2 zucchinis, diced
- 2 cups of mangold, diced
- 2 eggs
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions:
1. Bring a large pot of salted water to a boil and cook the pasta according to the package instructions.
2. Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the bacon and salami and cook until the bacon is crispy and the salami is lightly browned, about 5 minutes.
3. Add the zucchini and mangold to the skillet and cook until the vegetables are tender, about 5 minutes.
4. In a small bowl, whisk together the eggs and season with salt and pepper.
5. When the pasta is done cooking, drain it and add it to the skillet with the vegetables. Pour the egg mixture over the pasta and stir until the eggs are cooked and the pasta is coated in the sauce.
6. Serve the pasta carbonara with mangold immediately. Enjoy!
