Pasta Salad with Chives, Eggs, Cheese, and Potatoes
Ingredients:
- 8 ounces of your favorite pasta
- 2 tablespoons of chopped chives
- 2 hard boiled eggs, peeled and chopped
- 1/2 cup of shredded cheese
- 2 cups of cooked and diced potatoes
- 2 cups of salad greens
- 1 avocado, diced
- 2 tablespoons of olive oil
- 2 tablespoons of white wine vinegar
- Salt and pepper to taste
Instructions:
1. Cook the pasta according to the package instructions. Drain and rinse with cold water.
2. In a large bowl, combine the cooked pasta, chives, eggs, cheese, potatoes, salad greens, and avocado.
3. In a separate bowl, whisk together the olive oil, white wine vinegar, salt, and pepper.
4. Pour the dressing over the pasta salad and toss to combine.
5. Serve chilled or at room temperature. Enjoy!
