Pasta with Red Kuri Squash, Feta, and Mushroom Cream Sauce
Ingredients:
- 8 ounces of pasta
- 1 red kuri squash, peeled, seeded, and cubed
- 2 tablespoons of olive oil
- 1/2 cup of feta cheese, crumbled
- 1/4 cup of mascarpone cheese
- 1/2 cup of heavy cream
- 1/2 cup of mushrooms, sliced
- Salt and pepper to taste
Instructions:
1. Bring a large pot of salted water to a boil and add the pasta. Cook according to package instructions.
2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the squash cubes and cook until tender, about 5 minutes.
3. Add the feta cheese, mascarpone, heavy cream, mushrooms, salt, and pepper to the skillet. Stir to combine and cook until the sauce is thick and creamy, about 5 minutes.
4. Drain the pasta and add it to the skillet. Stir to combine and cook for another 2 minutes.
5. Serve the pasta with the squash, feta, and mushroom cream sauce. Enjoy!
