Make Pea and Egg Fried Rice
Pea and Egg Fried Rice
Ingredients:
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup peas
- 2 large eggs, lightly beaten
- 2 tomatoes, diced
- 2 cups cooked white rice
- Salt and pepper, to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the onion and garlic and cook until softened, about 3 minutes.
3. Add the peas and cook until tender, about 5 minutes.
4. Push the vegetables to the side of the pan and add the eggs. Cook until scrambled, about 2 minutes.
5. Add the tomatoes and cooked rice to the pan and stir to combine.
6. Cook until heated through, about 5 minutes.
7. Season with salt and pepper, to taste.
8. Serve warm. Enjoy!
