Peanut Butter Pasta with Frozen Meat


- 8 ounces of pasta of your choice
- 1/4 cup of creamy peanut butter
- 1/2 pound of frozen cooked meat of your choice
- 2 eggs
- 1/2 cup of shredded cheese
- 1/4 cup of diced onions
- 1/4 cup of diced tomatoes
- 2 tablespoons of butter
- 1 teaspoon of salt
- 2 slices of sourdough bread
- 2 cups of shredded lettuce


1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions.

2. While the pasta is cooking, heat a large skillet over medium heat. Add the butter and diced onions and cook until the onions are softened, about 5 minutes.

3. Add the frozen meat to the skillet and cook until heated through, about 5 minutes.

4. Add the diced tomatoes and cook for an additional 2 minutes.

5. Add the peanut butter and stir until combined.

6. In a separate bowl, whisk together the eggs and shredded cheese.

7. Once the pasta is cooked, drain and add to the skillet with the meat and vegetables.

8. Pour the egg and cheese mixture over the pasta and stir until combined.

9. Serve the pasta with the shredded lettuce and sourdough bread. Enjoy!
