Peanut Butter Rice Bowl

Ingredients:

- 2 tablespoons of oil
- 2 cups of cooked white rice
- 1/4 cup of peanut butter
- 1/4 cup of milk
- 2 tablespoons of all-purpose flour
- 2 tablespoons of sugar
- 2 eggs
- 2 potatoes, peeled and diced
- 2 cups of cooked spaghetti
- 1 can of canned beans, drained and rinsed

Instructions:

1. Preheat oven to 350 degrees F.

2. Heat oil in a large skillet over medium heat. Add the diced potatoes and cook until they are lightly browned, about 5 minutes.

3. In a medium bowl, whisk together the peanut butter, milk, flour, sugar, and eggs until smooth.

4. Add the cooked potatoes to the skillet and pour the peanut butter mixture over them. Stir to combine.

5. Add the cooked spaghetti and canned beans to the skillet and stir to combine.

6. Transfer the mixture to a greased 9x13-inch baking dish and spread it out evenly.

7. Bake for 25 minutes or until the top is golden brown and the edges are bubbling.

8. Serve the peanut butter rice bowl warm with extra peanut butter, if desired. Enjoy!
