Make Penne with Chicken and Peppers
Penne with Chicken and Peppers
Ingredients:
-1 pound of penne pasta
-2 tablespoons of olive oil
-1 pound of boneless, skinless chicken breasts, cut into cubes
-1 red bell pepper, diced
-1 green bell pepper, diced
-1 onion, diced
-3 cloves of garlic, minced
-1 teaspoon of dried oregano
-1 teaspoon of dried basil
-Salt and pepper, to taste
-1/2 cup of chicken broth
-1/4 cup of grated Parmesan cheese
Instructions:
1. Bring a large pot of salted water to a boil and cook the penne according to package instructions. Drain and set aside.
2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken cubes and cook until golden brown, about 5 minutes.
3. Add the bell peppers, onion, garlic, oregano, and basil to the skillet and cook until the vegetables are softened, about 5 minutes.
4. Add the chicken broth and bring to a simmer. Simmer for 5 minutes.
5. Add the cooked penne to the skillet and stir to combine. Simmer for an additional 5 minutes.
6. Remove from heat and stir in the Parmesan cheese. Season with salt and pepper, to taste.
7. Serve warm. Enjoy!
