Beef Wellington

Ingredients:

-1 sheet of puff pastry
1 lb. beef tenderloin
1/2 cup mushrooms, diced
1/4 cup shallots, diced
4 slices prosciutto
2 tablespoons butter
Salt and pepper to taste

Instructions:

1. Preheat oven to 375 degrees F.

2. Heat a large skillet over medium-high heat. Add the butter and let it melt.

3. Season the beef tenderloin with salt and pepper. Add the beef to the skillet and cook for 3-4 minutes on each side, or until it is browned. Remove the beef from the skillet and set aside.

4. Add the mushrooms and shallots to the skillet and cook for 3-4 minutes, or until they are softened.

5. Place the beef tenderloin on a sheet of puff pastry. Top the beef with the mushrooms and shallots.

6. Wrap the prosciutto around the beef and mushrooms.

7. Fold the puff pastry over the beef and mushrooms, sealing the edges.

8. Place the beef Wellington on a baking sheet and bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown.

9. Serve the beef Wellington warm. Enjoy!
