Tomato Rice

Ingredients:

- 2 cups of long grain white rice
- 1 large onion, diced
- 2 cloves of garlic, minced
- 2 large tomatoes, diced
- 1 teaspoon of salt
- 1 teaspoon of black pepper

Instructions:

1. In a large pot, heat 2 tablespoons of oil over medium heat.

2. Add the diced onion and garlic and cook until the onion is soft and translucent, about 5 minutes.

3. Add the diced tomatoes and cook for an additional 3 minutes.

4. Add the rice and stir to combine.

5. Pour in 2 cups of water and season with salt and pepper.

6. Bring the mixture to a boil, reduce the heat to low, and cover the pot.

7. Simmer for 15 minutes, or until the rice is cooked through.

8. Fluff the rice with a fork and serve. Enjoy!
