Tomato Fried Rice
Ingredients:
- 2 cups cooked rice
- 2 eggs
- 1 tomato, diced
- 1/2 onion, diced
- 2 cloves garlic, minced
- Salt and pepper, to taste
Instructions:
1. Heat a large skillet over medium-high heat.
2. Add the eggs and scramble until cooked through. Remove from the pan and set aside.
3. Add the onion and garlic to the pan and cook until softened, about 3 minutes.
4. Add the tomato and cook until softened, about 2 minutes.
5. Add the cooked rice and stir to combine.
6. Add the scrambled eggs back to the pan and stir to combine.
7. Season with salt and pepper, to taste.
8. Serve warm. Enjoy!
